TOJIRO CLASSIC Gyuto 180 mm — F-807
When you want agility, but still want a true Gyuto
Not everyone needs a 210 or 240 mm Gyuto.
For a compact kitchen, a medium-sized cutting board, or anyone already used to a blade of around 18 cm, the TOJIRO CLASSIC F-807 at 180 mm is a very interesting size.
Because what it gives up is “length”
but what it keeps is the shape of a Gyuto.
The tip is still slim and pointed, so beyond everyday cutting you can use it for detail work such as trimming ingredients, scoring, boning or working in tight spaces — more easily than with a knife that has a wider, rounder tip.
180 mm makes a Gyuto feel friendlier
The F-807 has a 180 mm blade, an overall length of about 310 mm and weighs about 185 g. Compared with the 210 mm F-808 at about 335 mm overall and 200 g, the F-807 is 30 mm shorter in the blade and roughly 15 g lighter.
On paper the difference looks small.
But on the cutting board, those 30 mm are more noticeable than you might expect.
The knife changes direction more easily, takes up less room on the board, and the tip sits closer to your hand — ideal for everyday prep that doesn't involve large ingredients all the time.
This is the key charm of the F-807.
It is still a full chef's knife
just one that is nimbler and more approachable.
So why not just choose a Santoku?
It's a good question, since Japanese Santoku are usually around 165–180 mm as well.
The difference is in the shape.
If you like a wide blade with room to scoop up ingredients and a shape focused on general cutting, a Santoku is an excellent choice.
But if you like the pointed tip of a Gyuto, want to use the tip for fine work, or enjoy the feel of a Western-style chef's knife in a more compact size, the F-807 has a different personality.
So choosing between a 180 mm Gyuto and a Santoku isn't just about which blade is longer.
It's about how you like to use a knife.
Smaller doesn't mean it's only for small jobs
180 mm is still long enough for most of the main tasks in the kitchen:
- Slicing meat
- Portioning fish
- Slicing shallots and onions
- Cutting vegetables
- Chopping herbs
- Preparing ingredients for everyday meals
All of this is comfortably within what the F-807 can handle.
Its disadvantage against a 210 or 240 mm knife becomes clear when slicing large ingredients, working with cabbage or big pieces of meat, or when you want a long cut in a single stroke.
So the F-807 is not a “Gyuto for light work”.
It's a Gyuto for people who value agility over blade length.
A design that has lasted with almost no need to explain itself
The F-807 uses the same familiar TOJIRO CLASSIC design:
- Plain blade
- Black handle
- Full Tang
- Three rivets
- Metal Bolster
No Damascus pattern.
No decoration trying to grab your attention.
Yet TOJIRO specifically lists the F-807 as a winner of the Good Design and Long-Life Design Award in 1996, just like the F-808.
For the F-807, the Long-Life Design award is interesting because its design still answers a simple question that has barely changed:
How do you make a chef's knife that is versatile, durable, and sized so it never becomes a burden to the user?
Decades later, the F-807's answer still makes sense.
F-807 or F-808?
- If you like a knife that is nimble in the hand
- Use a cutting board that isn't very large
- Cook in everyday quantities
- Or feel a 210 mm chef's knife is longer than you need
the 180 mm F-807 is likely a very enjoyable size.
But if you often handle large ingredients, want a longer slicing stroke, or want a single Gyuto that covers heavier work, the 210 mm F-808 gives you more working room.
So neither size is “better”.
The F-808 gives you more cutting length
while the F-807 gives you more agility.
And for anyone who already finds themselves reaching for a knife of about 18 cm most often,
the TOJIRO CLASSIC F-807 may fit your kitchen better than a 210 mm.
